Alternatively, use roughly chopped corn tortilla chips instead of the skillet-fried tortillas. I’m always enamored by the vast variety of regional specialties found in Texas. Repeat with each tortilla, adding more oil as needed.
I wonder if they make low carb corn ones.

As true as the other reviews, this recipe was a huge hit! of minced garlic with the peppers & onions, several grinds of black pepper and sea salt, 1-2 Tbsp of Frank's Red Hot Wings Buffalo sauce, couple dashes of Tabasco.

You can easily make King Ranch Chicken Casserole keto by substituting the white corn tortillas for a keto-friendly tortilla made with coconut, almond and/or cassava flour. I have made this several times and the only thing I do differently is I put my chicken breast in the crockpot and put it on high for 4 hours. In addition to tasting amazing, they are organic, soy free, gluten free, wheat free, and yeast free.

You can also use flour tortillas instead of corn and it's just as good, maybe even better since the corn tortillas can be a bit tough sometimes. Love it! Your daily values may be higher or lower depending on your calorie needs. I've never, ever used actual tortillas.
